Atlantic Salmon caviar is well renowned across the restaurant trade nationally, for its signature burst of flavour and rich and robust characteristics, used to complement many gourmet dishes. Smoked Salmon Pearls. We dry salt the roe with a 72 hour smoked salt from Olssons salt. Then cold smoke a minimum of three times using a local Mountain Ash Hardwood. Mild Smokey flavour.


Yarra Valley Caviar is one of the only fresh water aquaculture farms of its kind to take a completely natural approach to rearing, and milking, its Atlantic Salmon – refusing to use antibiotics or chemicals
