Tajima is the most famous of all Wagyu bloodlines. Originating from the Hyogo Japan prefecture, these black cattle were used to pull carts and ploughs so they developed larger forequarters and lighter hindquarters.
Short Rib is one of the most flavorful steaks in the steer. Extremely marbled and tender. Cooked properly, these ribs could run for the most flavorful cut of beef in a steer.
